Food has a clock on it. Everything you buy or make is losing value from the day it exists, and unsold stock past its date is worthless rather than discountable. That makes buying accuracy far more important than in categories where old stock is merely unfashionable.
Packaging and shipping are unusually heavy costs here. Sending food safely often means insulation, ice packs and next day delivery, and for lower priced items that can cost more than the product itself. Plenty of food sellers discover their small orders lose money.
The compensation is loyalty. People who like a hot sauce or a coffee buy it again, and repeat customers in food are genuinely valuable. Measuring that repeat rate is what tells you whether you have a brand or just a series of one off sales.
